Fall Festival Recipe Exchange - Coconut Oatmeal Cookies
My Friend Amy is hosting the Fall Festival Recipe Exchange. I'm always looking for new recipes so I thought I'd share one of mine in exchange. Not sure where the recipe originally came from, but hope you enjoy!
Coconut Oatmeal Cookies
Ingredients:
2 eggs
1 cup sugar
1 cup shortening
1 tsp vanilla
1 cup brown sugar
2 cups flour
5 tsp baking powder
½ tsp salt
1 tsp baking soda
1 ½ cup coconut
2 cups oatmeal
Optional Ingredients:
1 cup chocolate chips OR
½ cup raisins (yummy!!) OR
½ cup chopped nuts
Preheat oven to 350ยบ.
Cream together eggs, sugar, shortening, vanilla, and brown sugar. In a separate bowl, mix together flour, baking powder, salt, and baking soda.
Once egg and sugar mixture is smooth, slowly add in the flour mixture until well mixed.
Add coconut and oatmeal, and any other optional additions (raisins!!), until mixed thoroughly.
Using a teaspoon (small cereal spoon), spoon mixture into small balls onto a cookie sheet.
Bake for 10-15 minutes. (don't overcook--the coconut will brown really quickly!)
Yields 4 dozen cookies.

Oatmeal raisin cookies are my favorite! yes, more than chocolate chip :)
I love the sound of the added coconut, but the rest of my family wouldn't enjoy it ... maybe I should make a batch just for me!

I haven't seen an oatmeal cookie since...well, I don't know when! I love the idea of coconut with oatmeal.
*Everyone - I really hope you'll try these cookies--they are really really yummy. I usually use raisins, but I'm sure it would be good with raisins and choco chips.
Also, another warning to watch the cookies while they bake! That coconut will brown quicker than you think! I usually take them out of the oven when still a little doughy and let them finish cooking on the pan before moving to a cooling rack.
My husband's favorite cookie is oatmeal raisin. I bet the addition of coconut makes it that much more chewey, moist, and delicious!

Yum. Seriously, yum. Oatmeal cookies are my favorite and I love coconut in them. I made a martha stewart recipe once with coconut and chocolate chips with oatmeal- divine. just like these! :-)

OMG those look good. Mike is anti-raisin so I think ours would be chocolate chip. I need some now. (I say after noticing the scale is down a few numbers this morning.)
Thanks so much for posting this recipe! I made them tonight and they turned out great. The combo of coconut with the oatmeal and chocolate chips (because, in our house, every dessert must contain chocolate!) is fantastic. This made sooo many. I finally gave up and threw some of the dough in the fridge. Fortunately, this just means we'll have piping hot cookies for the rest of the week! :)
I'm not a big fan of coconut, but these look really good. =]
Could you use vegetable of canola oil instead of the shortening, do you think?

Oh yum! Those look and sound delicious! Sometimes I miss having a proper oven so I could do some backing.
*Everyone - Thanks so much for coming by! For those reluctant coconut eaters, the coconut isn't very strong tasting in these cookies. It does add a bit of texture, but that's there with the oatmeal anyway.
And yes, it does make a GIANT batch. :)
